I think a yogurt parfait would be lovely! Layers of yogurt, nilla wafers or graham crackers, fruit, whipped topping, and/or quick breads (like banana or zucchini bread). Mmmmm.

I just made this cake tonight...got the recipe from our pediatrician's newsletter. DS1 hardly eats any sweets at age 2 so I thought this might be a nice treat for him. He knows what cupcakes etc. are from his friends parties so I put some heavy whipped cream which I recently found out is low in sugar on top. He was really excited about it. I will admit the cake is more dense but it tastes good and is healthy!
2 cups whole wheat flour 1 tbsp wheat germ 1tsp baking soda 6 medium, ripe bananas - mashed 8 fl oz (1 cup) sugar-free applesauce 2-4 fl oz (1/4 to 1/2 cup) soy milk Preheat the oven to 325 deg F (160 deg C). In a bowl, combine the flour, wheat germ and baking soda. In a separate bowl, combine the applesauce with the mashed bananas and milk. Pour the applesauce mixture into the bowl with the dry ingredients and mix thoroughly. Pour into a greased pan and bake for around 1 1/2 hours. The cake is ready when a sharp knife inserted into the middle comes out clean Here is another one for a vegan chocolate cake- haven't tried this yet... 1-1/2 cups flour 1/3 cup cocoa powder 1tsp baking soda ½ tsp salt 1 cup sugar ½ cup vegetable oil 1 cup cold water 2 tsp vanilla extract 2 tsp vinegar Directions: Preheat your oven to 375°F (190°C). Mix all the dry ingredients in a small, square cooking pan. Mix all the wet ingredients (except the vinegar) in a separate bowl. Stir wet ingredients into dry until mixed. Quickly stir in vinegar and immediately put the pan in the oven and bake for 25 to 30 min. Cool thoroughly before serving. May I also suggest a mini cupcake pan- seriously one of the best things I've purchased. Perfect size for the little ones! |
