Dairy-free moms- Make your own delicious healthy vegan ice-cream! EASY!
No ice-cream maker needed!
I am so impressed with how easy this was and wondering why I didn't think of it sooner. I have heard you can buy coconut cream ice-cream but haven't found it close to us, I only found soy ice-cream which doesn't quite cut it, and I try not to have too much soy anyway. Recipe: Two 13.5 oz cans of coconut cream 3/4 cup sugar (or more to taste) 2 tsp vanilla extract (or you could split open a vanilla bean and use the seeds) Heat it all up together in a saucepan until sugar is dissolved well. Pour into a glass baking dish (I used a square 9 inch one) and allow to cool in the fridge for half an hour. Then place in freezer. After about 45 minutes remove from freezer, it should have started freezing around the edges a little, use a handheld electric beater (or whisk if you don't have) to whip it all up. Do this every 45 minutes for about 5 hours (or until it is starting to seem like it is freezing well, you don't want crystals forming to get nice smooth ice-cream). Then store it in the fridge covered! VOILA. I made this last night, I think it depends on how cold your freezer is as to how frequently you need to do the beating, you may want to try every half hour just in case at first. It will take overnight to set properly once you've finished the beating process. I am surprised how well it worked out! For a lighter healthier option, I think you could use coconut milk maybe (haven't tried), but the cream probably works better, and you can substitute the sugar for 1/2 cup agave syrup. My next step is to try experimenting with flavors, I really want to try making pistachio! I added a splash of brandy to mine to give it a slightly deeper flavor, could have added more probably. Seriously, it cost around $2 for a dish of ice-cream, can't beat that and my daughter and hubby love it! Hubby is well-impressed, he thought it was going to be a total flop.

I've tried the coconut milk ice cream they sell in stores (usually in the organic/health food section) and it's DELICIOUS!
Another easy recipe for those who are dairy/sugar/soy/wheat free is this easy recipe: Take a bunch of bananas. Peel them all. Put in freezer bag and pop into freezer. Two hours later, remove from bag and pop into food processor. VOILA! Instant smooth, creamy banana ice cream!!! |

There are a ton of recipes at veganicecream.blogspot.com that are really good and easy! You could use her flavor ideas and your method and have some seriously tasty treats. She uses soymilk/creamer a lot, but I substitute coconut cream and almond milk all the time (I'm allergic to both dairy and soy) with great results. I have also used tapioca starch instead of arrowroot by just adding the same amount of tapioca starch as arrowroot called for to the mixture before I heat it and letting it cook until it starts to thicken and the sugar is dissolved. Easy peasy! I actually made DH buy me an ice cream maker a couple of years ago as a present because the Purely Decadent by Turtle Mountain is soooo expensive, but totally yum and I *needed* ice cream. LOL I was pregnant at the time... good thing I didn't ask for pickles to go with it.

So just because I shake coconut at the store. I found one that didnt have any water in it. Well when I got home and cracked it open, there was water. So it was a VERY young coconut to be completely filled with water.
So I made my own coconut milk. I grated the meat of most of the coconut. Added some cream and milk to the coconut water to make 32 ounces of liquid. I boiled that with the grated coconut meat. Let the temp drop to room. Strained through cheese cloth. It knocked my liquid down to 24 ounces. Instead of adding sugar to your above recipe, I used honey. |
