I make a brown rice salad that is pretty simple. My DD loved it until we figured out she's allergic to tomatoes and cucumbers.
Cook as usual brown rice. While the rice cooks chop finely: de-seeded cucumbers, de-seeded tomatoes and purple/red onion. While the rice is still warm add and mix in the veggies, squeeze a lemon over the top and drizzle with a few T of olive oil, salt and pepper to taste. Stir the whole thing up. This is great warm, room temp or cold.
