one thing i am doing besides prepared freezer meals is having the ingredients for a quick dinner on hand. for example

Beef dip. have the packaged delimeat in the freezer along with buns. its nothing to whip up.
pizzas of course but you have that covered.
tortalini pasta keeps in freezer well uncooked. keep some jars of alfreado or your fave on hand in cupboard.

stuff like that. ingredients that you can just throw in the crockpot like roast and veggies. so simple and quick. throw it all in and done!

enchiladas! shredded chicken, beef, or pork mixed with sour cream, cheese, and one can diced green chiles. Roll up in corn torts, dump a can of enchilada sauce and top with cheese. Bake for about 30 min at 350. I usually freeze the filling and defrost/ roll later but in sure the whole thing could be frozen. GL
