We are liking Crockpot Ragout lately. I got it from the Passionate Homemaking blog.

1 lb ground beef
1 med. onion thinly sliced
6 carrots thinly sliced
4 potatoes thinly sliced
You can also add green beans, corn or peas. Pretty much any veggie you want.

Cook ground beef on the stovetop and season with garlic salt and pepper. Layer beef, onion, carrots and potatoes (or other veggies) seasoning with garlic salt and pepper between each layer. Add 1/2 to 1 cup of water and cook on low for around 6 hours. We like it because it tastes much like hamburger stew without all the stew juice. My kids like it with a little ketchup on top.

We white chicken chili.

1 lb of cooked, cubed chicken (you can use leftovers or you can even use canned)
1 can diced tomatoes
1 can white beans or chick peas (you can also do both if you like beans
1 small can diced green chiles
1 box chicken stock, or 3 regular size cans (if you like it thinner, you can add more)
1 tsp onion powder (or you can add half a small chopped onion, but DH hates onions so we leave it out)
1 tsp seasoning salt

Cook on low all day. Serve with crushed tortilla chips, sour cream, and shredded cheese (try pepper jack if you like it spicy, or cheddar or montery jack if you like it mild)

We sometimes serve it with cheese quesadillas too.
