cookie recipes?

I need a sugar cookie like cookie that is roll-able and not crunchy, but more chewy. And nothing with too much spice as my kids are weird! They are for halloween cut out cookies, so pumpkin is good as well!

I only use coconut oil or butter when baking so if it calls for shortening and I can't sub it I can't use it

Im a texture person and these are soft and chewy yet melt in your mouth.

I generally use this glaze recipe and tinker with the consistency depending on what Im doing with it. Thinner to glaze over the whole top then thicker for details. It dries to a nice semi-gloss not too hard youd bust a tooth like some yet perfectly set finish.

What about gingerbread type cookies? You can leave out the spices and the ginger (I've done it accidentally before) and to make them chewy rather than crunchy, either cut them a little thicker and/or cook them for a little less time. I have a great recipe made with butter and have been meaning to sub in some coconut oil for a while now but always forget.

Can't wait! I love this time of year for all of the fun and cute things I get to make with the kids! And they love it b/c they get to eat it all!
