Anyone make marshmallows?

I didn't really realize it but the recipe I used has an egg white in it and the egg isn't cooked at all. I mean, I added the warm sugar/gelatin mixture to the egg white but in no way is it hot enough to cook the egg. Anyone else use a recipe like this? Do you worry about it or not?

My girls love my homemade marshmallows, and have been begging me to make them again. I don't worry about raw egg whites, just use fresh ones! I whip them up for gingerbread house icing, and let my kids eat those too. And meringues too!
