Best food plan you have found or good recipies for gestional diabetes

So really early in pregnancy but all expect one of my 4 I had it so are just assuming we will this time. So would love to know some great recipies or a food plan you used that worked good. Am planning on trying to have a home birth so need to find something good and easy that I can use. I have gone and gotten all the info and eating plan based on calories but seeing if there is something a little easier maybe be albe to make a couple days food at once. Thanks

Re: Best food plan you have found or good recipies for gestional diabetes

I have GD this time around (had it with #1, did NOT with #2, have it with #3) and I've been testing my sugars regularly. Last night was the first dinner I had that kept me nice and full and didn't raise my sugar....it's also enough for several meals! White Chili in the Crock Pot.

1. I baked a whole chicken in the crockpot.... just clean and rinse and bake all morning and afternoon. (I did sprinkle with garlic salt) Mine was 5lbs and it cooked on low for 8hours.
2. Cut/slice/dice/chop whatever and return to cleaned crockpot
3. Add 1jar of salsa
4. Add 1 jar of rinsed Great Northern Beans
5. Add chicken broth to desired consistency
6. Add some shredded mozzarella
7. Cover and simmer for 2-3hours
8. Serve with fresh baked bread and sour cream.

mmmmmm.... it so hit the spot and I had big bowl with 2 pieces of bread and my blood sugar 1 hour post eating was 121 PERFECT!

OH... and I crave pizza terribly! I make it myself on a whole grain tortilla. Brush both side of tortilla with olive oil put on your desired toppings and cook it on a pizza pan with the holes in the bottom. 400degrees till it's a crispy as you want it I can actually eat 2 of them as the crust is so much lower in carbs then any thin crust you can purchase/order.
