I am trying to plan ahead for Thanksgiving and I am wondering if the all-butter crust can be frozen? I've never done that before...how would I go about it?

Note from Elise (This is the Author of the SimplyRecipes): Just roll out the pie dough and form the crust in the pie pan, then put it in the freezer. If you are freezing for more than a day or so, wrap it in plastic wrap and then aluminum foil first. You can also put the dough in the freezer before you roll it out, but then you will have to defrost it before using. A frozen pie crust you should use as is, without defrosting.

Re: make ahead pie crust?

Subbing so I can add my recipe later

I freeze in tins, then pop them out, and stack them w/ butcher paper in between so I can just use them like the store bought one.

Also, a trick on the perfect crust **Don't touch it with your hands!** If you melt the butter (with the heat of your hands) then you don't get as tender or flaky a crust.
Also, add a little sugar to the sweet pies and none to the savory.
and, don't over work the crust, the second it comes together in a ball STOP! and roll it out in as few rolls as you can Resist the urge to use the leftover bits you cut off, they will be tough.

I really love making pie crusts, they are so delicious once you find a recipe and method that works for you. You will never go back to the store crusts!

So funny. I learned from my grandma and she *only* uses her hands. I do it by feel as well.

I always pull it from the freezer to the fridge the day before. Usually works out well for me since I don't make pie on a spur of the moment... I'm a planner.

as long as you make a good crust, I guess you just have quick cold hands I don't like the food processor, but I do like dough blades or forks
