lentils?

We were gifted with a large amount of lentils...does anyone have a favorite lentil based recipe that they'd be willing to share? We're not much for curries (I love curry but DH isn't such a fan but is willing to try)

You can substitute 1 cup of cooked lentils for 1/2 of the ground beef in almost any recipe (when the recipe calls for 1 lb).

I got a recipe from a mama here for taco-style brown rice and lentils. It is easy and super delicious, even my DH who hates it when I use lentils instead of meat agrees that this is good and will eat it

This is the same recipe the Hillbilly Housewife has and I have made it in the crockpot. Works great. And all my people eat it.

How about some soup? Lentil and veggie soup is good.

thanks ladies!! lots of great ideas, I'm adding them to my collection as we will be eating alot of lentils this winter We're trying a lentil loaf for supper tomorrow night. *fingers crossed* I hope that my munchkins and hubby will eat it.

I start witha a base of garlic & onions & carrots sauteed lightly, then add lentils & cover in water, add some boullion cubes ( i like rapunzel brand) bring to boil, reduce heat 7 cook on low 20 minutes or so. just a super basic lentil soup recipe. You can take some of the lentils out, and puree then add it back in to make it heartier.

Also like to cook just the garlic & lentils, then add raw shredded carrots, raw red onion, agave & cider vinegar ( in mostly equal amounts) & salt & olive oil to make a nice cold lentil dish. raw red peppers are good in this too.

sooo another question....how long do you cook your lentils for I cooked mine as long as the recipe said but they were still really hard. Is that normal?
