I need some Easy Vegan Recipes
I would love some easy vegan recipes!! My dh is vegitarian and i can't eat milk products, eggs, or soy due to my dd allergies. please help us we have been eating pasta and sause just about every night!!
I have some recipes but i was just wondering if anyone had andy that were tried and ture for your family. Thanks Mommas!

I make a lentil curry that is easy and yummy - I'm kind of a on the fly cook, so I don't have exact ingredients, but I put (in the crock pot, but a stove pot would be fine too)
onion garlic can of tomatoes box of frozen spinach bag of lentils some vegetable stock to cover the lentils, or a bullion or two with water celery carrots salt/pepper lots and lots of curry When it's cooked I serve over rice. Another yumy dish is vegi kabobs. Marinade: 3/4 c olive oil 1/4 cup red wine vinegar 4ish cloves garlic thyme, basil, rosemary, salt/pepper Cut up eggplant, squash, green peppers, onion, mushrooms, etc - marinate for the day then kabob up and grill- sooo yummy.

2 1/2 c Vegetable broth
3 c Diced potatoes 1 c Finely chopped carrot 1/2 c Chopped onion 1 c Frozen green peas, corn -kernels, or chopped celery -(or combination of any of -these equaling 1 cup) 1/2 c Chopped mushrooms (opt) 1/4 c Flour 1/4 t Pepper 1/2 t Poultry seasoning 1/2 c Soy milk or water (filling -tastes much richer with -soy milk) 1 pk Extra-firm tofu, drained, -patted dry and cut into -cubes (10.5 oz or 16 oz) Salt to taste From "The Teen's Guide to Going Vegetarian," an upcoming book by Judy Krizmanic. Crust: Mix together flours and salt. Stir in oil and mix in water. Chill dough while making filling. Filling: In a large saucepan, bring vegetable broth to a boil over medium-high heat. Add potatoes, cover and cook 5 minutes. Add carrots, onions, and celery. Cover and cook 3 minutes. Add peas and-or corn and mushrooms. Cover and cook 2 minutes or until tender. Combine flour, pepper and poultry seasoning. Add soy milk or water and beat together well. Gradually add to vegetable mixture, stirring well. Over medium-high heat, stir constantly for about 3 minutes, or until mixture is thickened and bubbly. Remove from heat, stir in tofu, and salt to taste. To assemble: Heat oven to 350'F. Roll out dough to fit over the top of a 9" square casserole dish. Spoon tofu-vegetable mixture into casserole dish and cover with crust, cutting off any extra dough and folding over and pinching edges to seal. Cut 4 or 5 slits on top. Bake for about 40 minutes, or until crust is done. We don't use tofu and we use pillsbury crescent rolls to top with! |

veggi lasagna
jar of spaghetti sauce about 2 cups of chopped veggies of your choice (squash, zuc, mushrooms, carrotts, etc) ramano cheese 8 oz pkg moz cheese 6 lasagna noodles uncooked layer thinly sauce on bottom of 9x13 pan, then 3 noodles, then all ramano cheese, then veggies then 1/2 moz cheese, some more sauce then noodles to cover then remaining noodles then rest of sauce, cover w/foil and bake at 325 or so for about 45 mins - then remove foil, add remaining cheese and bake until melted. Ummmmm I wish DD could have dairy
