Hope this hasn't already been posted - we call it s**t on a shingle, but you could make up a more appropriate name - it's not even *my* name for it, but my parents'.

Ingredients: (for 3-4 people)
2 packages carl budding (or similar) beef lunchmeat - the small ones.
1 jar beef gravy
1 can cream of mushroom
bread
instant mashed potatos

Make desired amount of mashed potatos - I usually do 1.5 servings/person
On stove, over low/med heat - combine gravy and cream of mushroom (no water), heat and stir until blended well together.
Make two slices toast/person.
Cut up beef lunchmeat into approx. .5" squares
Cut toast diagonally, arrange around outer edges of plate - so a square empty middle area is made.
Pile mashed potatos into middle of plate.
Dump beef over potatos and toast.
Top with gravy.
Eat.

Not the healthiest meal, but cheap and filling.
Put mashed potatos

We made a few of these recipes this weekend - the beef tips in the crockpot (over brown rice and toast) with salad and the baked chicken and mushrooms, with brown rice and salad - and they were both WONDERFUL! Mmmmm...

I have about 15 I want to try!

Here's a cheap and QUICK recipe, we usually have it at least once a week

Breakfast burritos (we have them for dinner though! lol)

4-6 eggs
splash of milk
1/2 - 3/4 c salsa
fat free sour cream (optional)
shredded cheese
tortillas


Beat eggs with milk. Scramble in a frying pan. When eggs are cooked, add salsa and sour cream, stir until heated through.

Serve on tortillas with shredded cheese.

There's tons of ways to spice up this dish also; we add chipotle chile sauce, and sometimes black beans and corn. Kinda whatever you have on hand! Really super easy and the eggs are a cheap source of protien.

Awesome recipes ladies!!

I love casseroles, but its hard to do right now since most of them call for a cream of something soup and/or cheese. DS is allergic to dairy, so no creams or cheese. I've thought about trying soy cheese, but its so expensive ($5 for a package) and I've heard different stories about it not melting well, etc.

Anyways, this thread needs to stay alive for sure!

brown a pound of lean ground beef and drain
add some onion and green peas
add one can of cream of mushroom soup ( dont add water)
and mix all together
continue cooking until hot


I have no idea where my mum found this but it is one of our favourite dinners, even my hubby who hates cream of mushroom soup likes it!

Here are my few that off the top of my head I can give ya.

Meatloaf
1lb ground beef
1-1.5 cups italian bread crumbs OR oatmeal
1/2-1c Ketchup OR bbq sauce or pasta sauce
2 eggs
1/2 c. chopped onions (optional) as are any other leftover veggies you may wish to toss in - carrots, corn and others work well.

Other variations include adding taco seasonings, and stuffing the loaf with cheddar cheese or topping with cheese in the last few minutes of cooking

place in a dish shaping into a loaf (or smaller loaves cook faster)
Mix together with hands cook at 350 for 1 hr

This will serve 4 very hungry MEN or my family of 5 3 meals, use leftovers in sandwiches or heat on bread with a slice of cheese for a "hamburger"

(add sides such as green beans or corn and potatoes)

CROCK POT RED Chili
1 can black beans
1 can pinto beans
1 can chili beans
1 can kidney beans
3 cans diced tomatoes (or 1 lg can and 1 sm can)- I use with green chilies
1/2lb ground beef 1/2lb stew meat (cooked prior to putting in pot- or leftover taco meat/ leftover from a roast)
1-2 packets of chili seasoning
and optional is jalapenos or green chilies

This will feed our family 3-4 meals in the winter, add fritos (or corn chips) and cheese for "frito boats", Serve with corn bread, or place on the bottom of a casserole dish, pour a jiffy mix (prepared as directed without cooking) over top and cook according to jiffy directions, add cheese for additional 5 minutes (or until melted) on the top if desired.


Green Chili (Chicken or Pork)
1lb pork (or chicken), whatever is cheapest, boneless, cut into cubes, roll in flour cook in a bit of oil on the stove.
add and saute 1 onion (chopped)
add 1-2 cans of broth (your choice)
one HUGE can of green chilies (add additional fresh if available or add more smaller cans)
one can of diced jalapenos (optional)
1 packet of white chili seasoning (usually says white chicken chili)
1 can of diced tomatoes
1-2 cans of great northern beans or other white bean

This makes at least 2 meals, freezes easily, and you can place it all in a crock pot (the larger sized ones)

Fried Rice
choose chicken or my mom used SPAM growing up
1 container of spam or 1lb of boneless chicken cubed and cooked in about 3 TBSP butter, add 1/2 c onion, cook until clear, add 2-4 eggs, scramble in the mix, add 2 C. Cooked rice. Season with Soy Sauce (low sodium is just as good) toss well.

Chicken SLOP (as lovingly called in our home)
8 Corn Tortilla shells uncooked (I have also used crushed tortilla chips)
1lb boneless chicken cooked,
1 can Drained diced tomatoes
1 can green chili with pork or chicken
(combine the last 3)
up to 3 cups shredded cheese, depending on family taste

Layer Shells, chicken mix, Cheese, Shells, chicken mix, Cheese
cook 350 for 35 minutes or until cheese is melted or bubbly (whichever way you like it)

variations include making actual chicken enchiladas out of it or using flour shells or substituting ground beef taco mix that is left over and layering.

Ok so I just made the Taco ring and it smells delicious!!! I'm trying the crockpot curry and tater tot casserole this week too. 5 dollar meal week! woo hoo!!
Guess I'll add another:

Chicken fried Rice
Cook 2-4 cloves of garlic, 1/2 onion(diced), some frozen peas and carrots (I'd say a cup each maybe?, i just eyeball it), in oil.

When the veggies are almost soft add ketchup (1cup?) and some soy sauce. Then push all that to the side, pour some oil in a fry 3-4 cups rice in the oil.
Mix all together and add 1-2 cups leftover chicken. Heat through!

It's really good!!
