Muffins - high fiber, low fat
I bought some really yummy muffins from Trader Joe's the other day, but I don't want to make a 40 min one way trek on a regular basis to get them. Does anyone have some good recipes for really high fiber, but low fat muffins?

I know there are always a few (usually using raisin bran) in pregnancy cookbooks. I had a great one that used honey and molasses for extra iron, but I lost it
. What's that other series of vegetarian cookbooks--Moosewood? I think they had some, too.

These hearty whole wheat muffins get their sweetness from honey and raisins!
Prep Time: 20 Minutes Cook Time: 25 Minutes Ready In: 45 Minutes Yields: 12 servings INGREDIENTS: 1 cup whole wheat flour 1 cup wheat germ 2 3/4 cups wheat bran 2/3 cup oat bran 2 teaspoons baking powder 2 teaspoons baking soda 2 teaspoons ground ginger 1 tablespoon barley malt flour 3 tablespoons vegetable oil 2/3 cup honey 1 1/4 cups reduced-fat milk 1 cup low-fat plain yogurt 2 eggs, beaten 1 cup raisins DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 12 cup muffin pan. 2. In a medium bowl, mix whole wheat flour, wheat germ, wheat bran, oat bran, baking powder, baking soda, ground ginger, and barley malt flour. 3. In a separate medium bowl, thoroughly blend oil, honey, milk, yogurt, and eggs. Gradually fold milk mixture into the whole wheat flour mixture until moistened. Fold in the raisins. Spoon into the prepared muffin pan. 4. Bake 20 to 25 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Nutrition facts (per serving): Protein 10.1g. Carbohydrates 54.4g. Cals from Protein 12%. Cals from Fat 20%. Sodium 293mg. Calories (kcal) 54.4. Total Fat 7.2g. Fiber 9.7g. Cals from Carbohydrates 67%. Cholesterol 39mg. |

These muffins are very good and really easy. I don't have the nutritional analysis for them but based on what's in them, I'd say they are high in fiber.
Mix the following ingredients with a fork: 2 eggs 1/4 cup oil 3/4 cup sugar 1 tsp vanilla 3-4 mashed bananas Add 1 cup wheat bran and 3 tbsp ground flaxseed to 1 cup water and let sit for several minutes. Add this to above mixture. Add 1 1/2 cups whole wheat flour, 1 tsp baking powder and 1 tsp baking soda. Stir until just blended in. Optional: Add 3/4 cup chocolate chips or raisins. Bake at 375 for 20 minutes. Makes 12 -14 muffins. I also like baking these in mini muffin tins. My 20-month old loves having his own little muffin! |
