DS and I are dairy free and since I plan meals most of them are dairy free (although DH does a lot of the cooking). Some things we like are stir fry, breakfast for dinner (eggs or pancakes), lots of things on the grill (chicken, burgers, brats, salmon), tacos, spaghetti (I like to dice up greek olives and put them on top instead of parmesan cheese), and egg rolls and fried rice.

I'm sure I'll think of more and will add them later if I do

ETA: Our side dishes are mostly just veggies and fruit. We do lots of steamed broccoli, green beans steamed and then sauteed with garlic and sesame seeds, baked or grilled sweet potatoes. We also like to make couscous and Chipotle restaurant knock-off rice. Mmmmm!

It's my go to meal when I don't feel like cooking! I use the Tyson Chicken breasts that can go straight into a skillet from the freezer. I usually use one or two depending on how many I'm feeling. I sautee them with olive oil. In a seperate pan I cook rice if I don't have any leftover. But leftover rice is best. Then when chicken is cooked I remove from skillet and dice up. Add a little more oil to pain, add rice, frozen peas and carrots mix, a tablespoon or less of soy sauce and mix well. Then push mix to the side of pan and scramble an egg. Mix again, add diced chicken back in. Cook until veggies are done. Voila! I have skipped the oil and made unfried rice and I think it's just as good.
