I make this dish called mexican chicken and rice - it is just some pulled/diced chicken, rice and salsa - I top it with a little cheese! It is super good and easy - left overs are great too

I just cooked a turkey. With the meat I made a huge batch of turkey and barley soup and froze it. I made stock. I made turkey salad for sandwiches for the week. I made turkey alphabet soup for DD and froze it. I made gravy from the drippings and DH had turkey, gravy, mashed potatoes and peas for dinner last night. I also froze enough of the white meat to make 5 more dinners out of it. All from one 15 lb. Turkey.

Lentils are cheap and so good. I usually replace ground beef with lentils. Last week I made a lentil chili that was awesome. I also love my lentil soft tacos.

Have you thought about using ground turkey? I know around here you can buy a 1lb log of ground turkey from Jenny O for around a buck. They also sell a log of ground turkey w/ taco seasoning for a little over a buck. Here's some cheap recipes I make:

Hamburger Stroganoff
Tator Tot Casserole
Potato Soup
Chicken Noodle Soup
Taco Soup
White Chili
Potato Soap
Sloppy Joes
Beenie Weenies
Red Beans and Rice
Salad
Veg All casserole
Tuna Casserole
Chicken and Rice Casserole or Chicken and Noodle Casserole
Baked Spaghetti
Chicken Alfredo
BBQ Chicken


Listing some of these recipes made me realize I haven't made some of these in awhile...

For ground beef recipes sometimes I mix in cooked rice to stretch the meat. I got the idea from someone else here and I was surprised that it didn't taste that different!

Ya this! I added brown rice to BBQ's and my husband now prefers it this way.
