Coconut Oil
Can I use coconut oil as a butter substitute in baking? Or maybe half and half? Any info would be appreciated, thanks.

I use it all the time in baking and have great results. I normally cut the amount by half and have great results. Just add a little more liquid ingredient to make up for less oil. A good recipe to experiment on is pancakes and waffles.

My recipes say to use it interchangably. I don't cut it in half though.

I use it interchangeably too. However, I always cream it with sugar before adding cold eggs...otherwise it gets hard and grainy. With pancakes I mix liquor ngredients in my blender first.
