We're having corned buffalo (yeah, first time I've seen it, was at Whole Foods) and cabbage! With some carrots and potatoes thrown in for good measure. Its been cooking awhile and is making my mouth water!

we are having biscuit pot pie. i made the pot pie (mostly veggies, a little bit of chicken) filling earlier and put half in a bag for the freezer. in a bit i'll make up some biscuit mix and dump that on top of my filling which is waiting for me in the fridge
and a salad on the side because we got a massive amount of spring mix lettuce from my family.

Last night we had a chicken and veggie stir fry over brown rice.
Tonight is spaghetti and meatballs with steamed broccoli. And tomorrow we're taking a walk on the wild side and making a Moroccan vegetable tagine. |

Yesterday we had taco casserole using flour tortillas, cubed chicken, and no sour cream so I puréed fat free cottage cheese
added in some onions, fire roasted tomatoes, and tiny chopped bell peppers...first time I made it and the kids enjoyed it too.Today we had an Indian coconut fish curry. Marinated boneless white fish in coriander powder, turmeric, paprika, salt. And vinegar. Then sautéed both sides. In a pot we sautéed mustard seeds, added green chili, garlic, ginger, onions, tomatoes, and some more curry powders. Sauted that til reduced. Then added coconut milk and curry leaves and the fish. Simmered til done. Ate with white rice. Mmmmm.
