Removing phytates.

Thanks to the knowledge of an online friend, hehe.

Soaked from 3am with lemon juice to spead up the process. Gently heated around lunch and replaced water. Then rinsed and cooked that night. I only let the rice soak for about 6 hours.

I can NOT believe home tender, fluffy, and juicy they both were. I have never had a better batch of beans and rice. Wow!

Beans are hard for the body to break down. Most veggies are, especially nuts, legumes, and beans. If you soak/fermint, the toxins are released into the water and then rinsed away. I always did my soaking in the fridge so it never removed anything. I resently found out about this because a friend opened my eyes to the issue with soy and it lead to this.

Did you notice how fluffy the rice was? It didn't gum up and was so fresh tasting. I have never had rice that good! Beans either!

It took much longer for them to make the gravy (my fav part), but soooo worth it!

If you do the 2 day soak on the counter, just keep the water replaced.

Katy has more experience than me so she may have some tips.

This is one of our fav meals! I froxe the leftovers and we will be having them tonight!
We put a huge sweet onion in and chopped pork stew meat! Oh, I'm starving now!
