My 21 month old helps make dinner. Husband is only home 2 nights a week, so it's just DS and me for dinner most nights. He pulls a chair up to the counter and will help pour ingredients into bowls and stir things together. He likes to throw trash away and wipe the counters off, too. When I have to use the stove, he pulls the chair to that side of the kitchen and plays with spoons or the light switch (not within reach of the stove, but where I can see him). If he isn't in the mood to help he will play with the fridge magnets, but he really likes to be up in that chair helping.

I don't feel that bad about it, I normally only stick it on for half an hour, and put the baby in the exersaucer, just so I can get everything done with nobody at my feet or whining at me. I also usually give them some veggie sticks, whatever I am busy cutting up to cook (raw broccoli, carrot, red pepper etc), so that they don't get hungry and then if they don't eat too much dinner I don't feel like they got no nutrition.

depending on what I'm cooking sometimes my 2 likes to help but most day's I put the 1 and 2 year olds in the living room and close the gates and than put the baby in the dining room in her swing

Mine like to stand on a chair at the sink and play with bottles and spoons etc, and I turn on a trickle of water for them. Peeling onions and oranges keeps them busy and quiet for a while. And they also like to play with and eat frozen peas.
