Lentil ideas?

Title says it all. Particularly interested in lentil salads. Thanks!

I should add I have a bunch of green lentils.

Re: Lentil ideas?

I love lentil soup, with greens and sausage.

I've made a lentil salad with cherry tomatoes and feta cheese, lemon juice, salt, pepper.

Re: Lentil ideas?

Lentils and rice are popular in india. Garnish with cooked tomato, onion and just cilantro.

I was going to suggest lentils and rice as well.

This brown rice and lentil casserole was pretty good:

My husband isn't really a big fan of dishes without meat but he liked it!

www.gnowfglins.com has a recipe for sloppy joes in a bowl that you can sub the beef for lentils. I mix the 2, 1lb of beef and about 2 cups sprouted lentils and the whole family loves it.

Lentil tacos are also really good. We've found we like our lentils sprouted the best. DH hated lentils until I started sprouting them and now he likes them.

I've made lentil tacos before, my kids didn't even know it wasn't ground beef. They were really good.

Re: Lentil ideas?

It is certainly not salad but I recently made lentil meatloaf and it was a big hit. It is a little bit of effort but I am ok with effort if the results are delicious . Here is a link for the recipe http://www.healthfulpursuit.com/2012...til-meat-loaf/

http://allrecipes.com/recipe/tasty-lentil-tacos/

I like lentil tacos except I use veggie broth instead of chicken and a few other slight changes. I make this regularly.

I also like sloppy Josephines
