Softer Pizza Crust?

I like making homemade pizza, and I think they taste just fine, but I am wondering how to make the crust softer. I cook ours on a stone, but dh has banned me from using it anymore because it stinks up the house for some reason. Would a stainless steel pizza pan also help the crust stay softer? I found one at Bed Bath and Beyond. I just don't want a pan with a non stick coating.

If I could perfect the crust, we would never have to go pick up pizza again.

Re: Softer Pizza Crust?

IMO the stone definitely makes the pizza crust crispier IF you heat the stone w/the oven. If you're putting all of it in the oven at the same time (on a cold stone) then it shouldn't make a big difference.

Sometimes I make our pizza on the stone (HOT) and sometimes I make it on a regular cookie with with a silpat. It is much less crispy on the silpat and cookie sheet.

i find that using a pizza stone and putting some sourdough starter in the dough makes it soft
