Oh I am curious for ideas too. I don't do that many casseroles but I like making a brown rice & lentil casserole sometimes.

I made the one below the first time by the recipe then after that I'd just wing it and have often used leftover spaghetti sauce. We like the egg noodles in the original recipe but I have substituted those for numerous other shapes such as rotini, penne, small shells, macaroni, and even spaghetti noodles. I have also used whatever cheese available in the fridge. I like adding sauteed veggies: eggplant, zucchini, mushrooms, etc. We LOVE it and even my spaghetti hating 25 yr old ds requests this when he comes over for dinner.
Beef Lombardi Southern Living OCTOBER 2003 Yield: Makes 6 servings Cook time:41 Minutes Prep time:10 Minutes Bake:40 Minutes Ingredients 1 pound lean ground beef 1 (14 1/2-ounce) can chopped tomatoes 1 (10-ounce) can diced tomatoes and green chiles 2 teaspoons sugar 2 teaspoons salt 1/4 teaspoon pepper 1 (6-ounce) can tomato paste 1 bay leaf 1 (6-ounce) package medium egg noodles 6 green onions, chopped (about 1/2 cup) 1 cup sour cream 1 cup (4 ounces) shredded sharp Cheddar cheese 1 cup shredded Parmesan cheese 1 cup (4 ounces) shredded mozzarella cheese Garnish: fresh parsley sprigs Preparation Cook ground beef in a large skillet over medium heat 5 to 6 minutes, stirring until it crumbles and is no longer pink. Drain. Stir in chopped tomatoes and next 4 ingredients; cook 5 minutes. Add tomato paste and bay leaf, and simmer 30 minutes. Cook egg noodles according to package directions; drain. Stir together cooked egg noodles, chopped green onions, and sour cream until blended. Place noodle mixture in bottom of a lightly greased 13- x 9-inch baking dish. Top with beef mixture; sprinkle evenly with cheeses. Bake, covered with aluminum foil, at 350° for 35 minutes. Uncover casserole, and bake 5 more minutes. Garnish, if desired. Note: Freeze casserole up to 1 month, if desired. Thaw in refrigerator overnight. Bake as directed. To lighten: Substitute low-fat or fat-free sour cream and 2% reduced-fat Cheddar cheese. Reduce amount of cheeses on top to 1/2 cup each.

Chicken, Broccoli, Onion, Mushroom and Rice....yum yum
Saute onions and mushrooms in a few tablespoons of butter until nice and soft. Add two tablespoons of flour. Cook together until incorporated. Add two cups of milk. Stir until thickened. Mix together with 2 -2.5 cups cooked shredded or cubed chicken or turkey, steamed broccoli (I go big with broccoli because we adore it, so can't give you an exact amount), 3 cups cooked rice, some fresh black pepper, and mix really well. Pour into greased casserole pan and bake covered at 350 for around 25 mins. Top with cheese if you want and cook uncovered around 10 mins until cheese is bubbly. One time I had a half package of those french fried onions and sprinkled those on.... yum yum. I made several pans of this to freeze before I had my son, and it's great because for the two of us adults, each pan made two servings each for dinner and two for my husband for lunch so we got two dinners and two lunches for him out of it. Cook once, eat twice

We LOVE King Ranch Chicken Casserole around here!
I will normally cook 2-3 whole chickens at a time a few days before, then take all the meat off and make casserole, chicken salad, mexican chicken, ect and either freeze the bones to make stock in the crockpot later or go ahead and make the stock then! King Ranch Chicken Casserole *Will keep in the freezer* 3-4 c of chicken (or 1 whole chicken) 1 c chopped onions sautéed in butter 1 lb Cheddar or yellow cheese 8-9 corn tortillas cut into bite-size squares 1 can cream of mushroom soup 1 can cream of chicken soup 1 can cream of celery soup 1 can chicken broth (about 10 ¾ oz) 1 small can green chilies, chopped (optional) 1 can Rotel tomatoes and green chilies Drop tortillas in chicken broth to soften. Mix soup concentrates, chilies, and Rotel together in a large pan. Add broth, heat slowly and flavor with seasoned salt and pepper. Add more chilies, Rotel, or Tabasco as to your taste. In a buttered casserole, put a layer of cut up tortillas, then chicken, then onion. Sprinkle on half the cheese and ladle half the soup mixture over the top of the first layer before starting the second layer. Heat about 1 hr @ 350 degrees or cool well, cover and freeze. Make sure to cook with foil on top. |

1-1.5 lb ground meat (I've used beef, turkey or pork), browned with 1 TB brown sugar 16 oz pasta, cooked al dente 1 pint tomato soup (I use homemade, but canned would work) 1.5 cups white sauce (or 1 can cream of mushroom soup) Shredded cheese After meat is browned, mix with tomato soup and cook until warmed through. Layer on the bottom of a 9x13 pan. Layer a small amount of cheese on top of the meat mixture. Mix cooked pasta and white sauce, layer on top of cheese. Cover top of casserole with remaining cheese. Bake at 350 for 15-20 minutes, until cheese is melted and casserole is heated through. This is one of our favorite recipes!!

If you've never had the Disney 50's Prime Time Cafe's Chicken Pot Pie, it's AMAZING! The recipe is online, and if I'm ever feeling particularly lazy and I don't feel like making the pie crust, I turn it into a casserole using any type of noodles I have on hand. I also use whatever veggies I have on hand too. The sauce in the recipe really is all you need to follow.
Here's the pot pie recipe...just use a pound of noodles instead of making a crust and top the casserole with french fried onions, or chips or breadcrumbs: Ingredients 2 cups chicken tenderloins, uncooked 1 cups broccoli, tops only 1/2 cups carrots, cubed 1/2 cups celery, cubed 1/4 cups leeks, diced 3 tablespoons butter 3 tablespoons flour 3 cups milk or half and half 1 cups Parmesan cheese, grated 2 chicken bouillon cubes Pastry dough for a single pie (double crust) 1 egg, beaten Instructions Preheat oven to 400 degrees. In boiling salted water, simmer chicken tenderloins, broccoli, carrots, celery, and leeks until chicken is fully cooked and vegetables are tender, but still firm (about 15 minutes). Drain well and set aside. In a medium sized skillet, melt butter and add flour. Cook for 5 minutes and add milk or half-and-half. Bring to a boil and simmer until thickened (about 10 minutes). Dissolve chicken bouillon cubes in 1/4 cup warm water and add to sauce. Blend in grated Parmesan che3ese and remove from heat. Add cooked chicken and vegetables and mix well. Pour mixture into a deep-dish pie plate and cover with pie dough. Seal edges well and brush top with beaten egg. Bake until crust is golden brown and the filling is hot (about 45 to 50 minutes). Brushing a little milk on the top of the pie dough before baking will give the crush a delightful color.
