why are my dumplings puffy ?

I made chicken and dumplings today.
My dumplings recipe is

1/2 cup milk
5 tblspoons butter
1 egg
2 cups flour
1/2 tsp salt.

and they are puffy
why?? this is the same recipe I use all the time !
Any ideas.

The only thing I can think of, if you're using the same recipe you always use, is that you somehow worked too much air into the dough this time.

they calmed down after a bit LOL ..I kneaded them too long :/ thats what happened. DOH.

Bah. In my world dumplings are MEANT to be puffy... My stepdad likes those crazy flat ones, but they are more like tortillas.

I see you figured it out... otherwise I was gonna say maybe you used self-rising flour by mistake... Not that I've done that or anything

Haha! That's what that Good Eats episode was all about! North vs. South, floaters vs. sinkers... Me personally, having grown up in New Jersey and New Orleans, I like them all.

Yep, me too! So sad that Good Eats is over. But if you're interested in the geekier aspects of cooking, check out America's Test Kitchen (and Cook's Country, if your station airs it) on PBS.
