Canning question...

I have some beets right now that I would like to pickle and then can. The last time I was pregnant I was eating these like crazy in the first trimester.

Anyway, the recipe I have calls for white sugar and I normally cook with rapadara or succrat (pardon my spelling). Could I use that instead?

well it's one of those ymmv kind of things. I've tried it and didn't get great results eliminating all the sugar. I've done half cane sugar and half splenda and gotten pretty consistently good results aside from some rapid color loss. The taste was still good, but I stored it all in a fridge to be extra safe. Sugar helps with the preservation so I don't know if it would affect the shelf life in the long run. We ate it all in under 6 mos.
