I need healthy muffin and cookie recipes
My 21 month old is very picky. Like, to the point that I have an appointment with the doc on Friday to discuss it among other issues, including language. She doesn't talk so she can't tell me she doesn't like something. Most things she rejects, she's NEVER tried. My mom jokes that if you put a new sliced veggie in front of her, and a lint ball, she would put the lint ball in her mouth and drop the sliced veggie on the floor. And, unfortunately, it's funny because it's true. Its true if you try it with veggies, fruits, berries, eggs, etc etc.
Anyway, some of the things she DOES eat are cookies, muffins, and breads. I have not found a cookie she will reject. Every single one I have tried, she has eatten. Most muffins, particularly the mini style, she will eat. And breads, if she is hungry, she will at least try most of them. So I am looking for some healthy cookie or muffin recipes. Preferably things that have veggies in them, like carrot muffins or zucchini cookies or something like that. They don't even need to be sweet, she's not gravitating towards sweets and won't even touch cake or frosting. Spam me with your favorite healthy muffin or cookie recipes!

Have you heard of the cookbook Deceptively Delicious by Jessica Sienfeld? She has all kinds of recipes (including quite a lot of baked goods) with veggies in them. The whole point of the cookbook is to sneak veggies into the diet of a picky eater. You can buy it on amazon for around $10. I've liked all of the recipes I've tried

Now, toy cars, rocks, dirty, etc...all that goes in her mouth no problem. But the berries that DD1 was snacking on in the grocery store today, she wouldn't touch it.

She does have several muffin/bread recipes with veggies in them too. I get the texture thing, I have an adult sister who had always been and is still to this day very funny about textures. My 27 month old DD has never been that picky but has definitely gone through some interesting phases as far as what she will and won't eat. She lived on avocado and whole wheat crackers for a while when she was younger!

I just drop them on a cookie sheet instead of making a pie I also omit the oil and it still tastes the same as if you use it. And i cut down the sugar to 1/2 cup instead of 1 1/2. These are yummy

I know you weren't asking about this, but just out of curiosity...have you tried signing with her? You said she can't tell you if she doesn't like something because she doesn't talk, and while my DD NEVER stops talking, lol, it still isn't always easy to understand what she's trying to tell me b/c her words aren't perfect yet. Signing has helped us soooooo much, and it hasn't held her back in verbally speaking one bit, she does them both together. I have seriously been amazed at how much it has helped communication between us. Not trying to stick my nose in where it doesn't belong, just a thought....

If you haven't already, you should absolutely try the Signing Time series....my DD loves the dvd's, and I don't mind her wanting to watch them because she learns so much every single time, she can sign tons....I haven't taught her any signs, she's learned them all from Signing Time. She has zero interest in any other movies, tv shows, etc (which thrills me). Anyway, I don't mean to sound like I am pushing this on you...I just love it so much, and I'm glad someone told me about it because it really does work. Good luck, God bless!

http://www.food.com/recipe/chocolate...-cookies-61402 I'm gonna make these tonight, and there are Zucchini brownies (very yummy, I didn't do the frosting though), and this Zucchini bread is very yummy (I added an extra cup of zucchini, and you can easily substitute shredded carrots if you want too!) When I baked all of these, I used applesause instead of oil.
