"putting up" veggies?????

dh's uncle brought over lots of veggies yesterday and i am trying to find ways to "put them up" as they say....sooo if youhave any good tips on how to do this PLEASE share...since i really have no clue what to do for long time storage!!

types of veggies i have in the fridge to do something with...
shuked ears of corn
cucumbers
yellow squash
red and green tomotoes

and really who konws what else... the veggies and few soda fridge packs are the only things in the firdge and it is now full!!!

so far i am thinking about stripping the ears of corn (well some of them not all) and fixing corn skillet cream style...but then i dont know how to "put them up" the right way...sooo please help me

oh and how do you store full ears of cron for the winter??

i have freezer bag ziplock quart size and a package of canning jars...just dont really know how to do that...

Do you have a pressure cooker/canner? Because you can't/shouldn't can without one. Your best bet is to freeze it. You can freeze in containers and then pop it out of the container and put it in a bag for portion sizing if you like. You can turn some of the cucumbers into pickles (you can use the canning jars for that) but those won't freeze or can well really.

When we were getting 2 dozen ears of corn a week from our CSA, we just froze them without even shucking them. Just put them into food saver bags, vacuum sealed them and had them all winter long. Tasted as good as fresh.

When my beans and corn were at peak harvest last year I was overwhelmed with them so I froze a lot in gallon freezer bags. Only thing I'll do differently this year is make sure everything is casserole dish ready before freezing and give them a flash boil. I loved having all the fresh stuff but it was a bummer to have to defrost it and then still have to string/chop whatever.

You could make refrigerator pickles with the cukes if you don't have canning equipment, and freeze the rest of the veggies. I think somebody posted a recipe in one of the other canning threads in this section.

thanks ladies!!! i have a old fashion hot water bath tub...but looked online at how to do it...and to can corn it has to be at a boil for like 280 min.s sooo that is not going to work...i boiled the ears for 5min.s then put into cold water to cool then stripped them and put 1 nights helpings into bags and covered with water to freeze...that is the best way i found to do corn...now on the the other stuff tonight! this is FUN!!

You can do pickles in a water bath canner and it only takes a few minutes. We do pickles this way every year.
