Meal planning help

I really could use the expertise of you wonderful mamas who can meal plan. We have spent an awful lot of money lately eating out and it really needs to stop. I used to be fairly good at weekly meal planning but the last year and a half has been a whirlwind since dd (20 months now) was diagnosed with cancer and then had a liver transplant. She's doing great now and life is back on track at home now.
This pregnancy I'm still anemic (like with every other pregnancy before) and just have no energy to cook most of the time. Dd has a pretty severe dairy intolerance so no milk, eggs, cheese or yogurt. Because of her transplant she can't eat citrus, 2 of the boys are repulsed by eating a sandwich and dd won't eat them either. DH is not am adventurous eater but I know how to sneak shredded zucchini and carrots into spaghetti sauce.
I need easy dinner ideas that don't need much work all at once (I can do little bits throughout the day) and that can freeze for meals later in the month. I have a crockpot but don't use it much because I've run out of ideas for it. Only 2 of 6 people (not me) like fish but everyone loves chicken, pork and beef. Thanks in advance for your help mamas!

Chicken roast with potatoes and veggies, just cook 1.5 hours at 400 (double check the temp)

Brown ground beef, put in two cans of chunky veggie soup plus half can water and whatever spices you like. Boil. Add 1.5 cups rice, summer for 20. Done.

Good ol Lawry's seasoning on baked chicken.

Taco salad: just have to brown the meat, warm some beans, and everyone makes their own with salad mix, beef, beans, tomatoes, onions, olives, cheese, fritos and Dorothy Lynch dressing as options. Not sure if your DD would be bothered by the cheese being an option for the others.
