I can so relate! My 3 yr old still has yet to try most fruit. She would totally live on bread and rice and noodles if I let her. Will she eat Popsicles? I blend up smoothies and freeZe them in Popsicle molds. It's the only fruit she will eat!

I'm on my phone so can't link right now. But the blog vegan dad has a great quinoa muffin that is high in protein. It has quinoa flax hemp seeds . It calls for choc chips. I usually do half chips and half cranberries. Just google "vegan dad protein muffins".

I love these muffins! This is a great base recipe that you can customize. So far I have tried a banana version and a blueberry version. Both were very tasty! I used steel cut oats even and the muffins turned out awesome. Soaking grains takes a little planning ahead, but the health benefits are worth it IMO Also, I have been making a double batch both times and throwing some in the freezer in case I don't plan ahead and get stuck without snacks in the house
