Fried rice! Leftover rice, an egg or two, and leftover veggies of pretty much any kind, with some soy sauce in there for saltiness. Yum!

Tuna Casserole.

Tuna
Egg Noodles
Cream of Mushroom soup
peas
Half a soup can of milk
Salt and pepper.

Cook noodles. Add rest of items and heat through. Quick and cheap.

Chicken Almond

4 breasts of chicken
Can of cream of chicken
Can of evaporated milk
Almonds


Brown chicken in oil
Combine rest of ingredients in casserole dish and bake at 350 until heated through (45 minutes)

Homemade pizza- I make a double batch of dough every other week and freeze half, so we have pizza once per week. Doesn't use much sauce, the most expensive thing is the cheese, but I buy the big bag and it lasts quite a while! Toppings vary and are usually pretty inexpensive also.

Soup.

Whenever we do a whole chicken I boil up the leftover/carcass and make broth which I freeze.....so essentially the broth is free.

I use the broth and toss in whatever leftover veggies we have in the fridge (usually onion, corn, beans, celery, carrot) any leftover chicken we have and noodles. Add seasoning to taste. In the last part of the cooking we toss some dumplings (made from Bisquick) on top and allow them to cook. Its filling and tasty and even the kids will eat it.

Another favorite is to use the broth, add a jar of salsa, some chicken, a can of corn and a can of black beans and a handful of rice. Boil until rice is soft. Serve with shredded cheese and nacho chips.

Frittatas.. Basically I cook pasta.. Put it into a large skillet.. Beat like 8 eggs with some milk our over pasta and lots of cheese. Cook on one side and use a plate/cutting board to flip it and cook other side.
