Want to pack your family the YUMMIEST sandwich?? Here you go.
Sick of pbj, tuna, or grilled cheese? This sandwich is the solution. The key is the pesto and the roasted red bell peppers - they make a simple ham and cheese sandwich world-class! I made these sandwiches for a picnic and got RAVES.
Pesto took only 5 minutes. Took a little time to make the roasted bell pepper but it wasn't difficult, and was well worth it! I layered turkey, ham, deli cheese, sliced tomatoes, roasted red peppers (see method below), and shredded lettuce between the bread. Slathered the slices with the pesto (see recipe below). You can add cukes, alfalfa, and other toppings as you please but I don't like my sandwiches too bulky so I stick to the basics. If you like dijon mustard, by all means spread it on one of the slices of bread! Roasted red peppers - Wash the whole red bell pepper and set it under the broiler (not too close to the heat). Char the pepper all over as evenly as possible (the skin will blacken). Maybe 7-10 minutes per side? Once it's all blackened take it out, put it in a sealed ziploc or container and let it steam for 20 minutes. Then peel off the skin, clean out the seeds/core/stem, and slice up the roasted flesh. SUNDRIED TOMATO BASIL PESTO!! Just whirl the ingredients in your blender, food processor, or Magic Bullet. 4 ounces sun-dried tomatoes 2 tablespoons chopped fresh basil 2 tablespoons chopped fresh parsley (optional - I didn't need this) 1 tablespoon chopped garlic 1/4 cup chopped pine nuts 5 tablespoons chopped onion 1/4 cup red wine vinegar 1 tablespoon tomato paste (optional - I didn't need this) 1/3 cup crushed tomatoes (optional - I didn't need this) 1/4 cup red wine 1/2 cup olive oil 1/2 cup grated Parmesan cheese salt to taste sugar to taste You can make a large amount of pesto and refrigerate it - use it to toss with pasta and chicken and veggies for a one-dish meal!

Could I also roast the bell pepper by using some grill tongs and turning it over on top of a gas burner that doesn't have a pan on it?

Yup, in fact that's how I often do it. Some say it roasts better that way, but I have to hold it instead of being able to just let it sit in the oven which is a pain to me. And the liquid drips onto the burner and I have to clean it off later... I found it trickier to get an even char over the gas flame, probably because I was impatient and kept turning it early.
