Lets See Your Canning Shelves

i posted these pics in the farming thread, but i wanted to share my pictures here with everyone else and it's nice knowing you all will love them!! Please post pictures of your own setup. i want to see what you all have canned

it's almost full!! got to get more jars and then i have another shelf on the other side of the room that will get filled up! still need to can for the year... spagetti sauce (yes more) potatoes, pickles, beets, pepper relish, salsa, applesauce, & more green beans. We go through about 2 jars of spagetti sauce a week here for various meals and snacks. i have 40 jars canned so far. so i need at least double that. and we eat about 1-2 jars of beans a week too.

bottom shelf--soap curing, onions and potatoes


next shelf--spagetti sauce, beets, carrots, applesauce, pumpkin from last year


next shelf--this one is smaller in height and i use it for my little jars. strawberry and black rasberry jam, pickles, salsa, relish, sauerkraut



top shelf--cherry mash (moonshine), chicken stock, potatoes, carrots, greenbeans

That looks so gorgeous! I'll have to get pictures of mine when I get home, if I can find my camera. I put it some place so I would know where it was and that Bugga couldn't get at and I completely forgot where I put it. :giggles: I've got to do some rearranging with my jars since DH decided to go through to find something to eat and messed everything up. I have been busy this week, too, with canning. I did 8 half pnits of cherries (I know, I still have to get pictures of them), 9 4oz and 2 half pints (for the fairs) of cherry jelly from the left over juice, 4 pints of glazed carrots, 12 pints of tomato soup, 4 pints of bbq sauce. I still have to do some pickles, more glazed carrots (I need more brown sugar), pickled garlic and some mixed veggies.

I'm jealous. Our season really just began. So we only have 10 quarts of pickles (made 14 but gave 4 away). 8 pints of strawberry jam, 8 of triple berry, 4 blackberry- making 4 more tomorrow and 8 of apple jelly. I am hoping to get enough green bean this weekend to make some dill green beans since they don't need to be pressure canned. I don't have a pressure canner. Think I am going to make some pickled green tomatoes this week. Then will be canning diced tomatoes once they ripen.

Here's mine so far (I have a ton of stuff in the freezer too, really need to organize it again and take pics peaches, cherries , bell peppers, strawberries, blackberries , zucchini, tomatoes, prunes, cranberries, grn beans etc)



top shelf - jams (blackberry , blackberry apricot, pear butter, apricot peach, apricot,cherry, apricot plum, strawberry, and some apricot cherry syrup

2nd- cherries and cherry-apricot for pie filling etc, pear sauce and peaches

3rd-apricots apricots and more apricots haha

bottom - pears





top - diced tomatoes , tomato sauce (lots more coming )
bottom - sweet zucchini relish , spicy sweet zucc relish , salsa and zucchini bread n butter pickles

sure, but it's not much of a recipe!! i just toss it all in a pot! lol i'll give you what i believe the eyeballed measurements are okay


i put my tomatoes through a food processor/blender till they are pureed. skin and all. just cored and bad spots removed. dump all the puree in a stock pot. i usually use the big pot like you would use for cooking spagetti. anyways, fill that 3/4 full with the puree mixture. then add 3-4 small jars of the tomato paste store bought to help give a thicker texture. you can add more than this if you like your sauce super thick or it would be better for pizza sauce if you thicken it just a bit more!

4-6 tablespoons garlic
4-6 tablespoons italian seasoning
3 tablespoons salt
1/2 cup sugar
2-3 bay leaves

and that's it!! let it cook for 1-2 hours and laddle into jars. top with hot lids and flip upside down for the day. the next day check to make sure everything is sealed and you're good to go!

ps---you can also add an onion or a green pepper or both for some extra texture and flavor for the sauce. just chop super fine or puree it with the tomatoes!

This should not be done, they are have more acid in them than they used to and need to be water bathed or pressure canned.

I've not put up much this year just about 40pts of beans, elderberry juice and cough syrup and some chicken broth and soup.

well, i've been doing it like that for over 15 years and have never had problems.
