ZUCCHINI MUFFINS 3 eggs or egg substitute 1 c. sugar 1 c. applesauce 1 1/2 tsp. vanilla 2 c. grated zucchini 3 c. flour 1/2 tsp. salt 1 tsp. baking soda 1/2 tsp. baking powder 1-2 tsp. cinnamon 2 c. chopped dates or raisins 1 c. chopped pecans or walnuts Beat eggs until light and fluffy. Add sugar and applesauce. Add zucchini and vanilla. Add dry ingredients and blend. Add dates or raisins and nuts. Fill greased muffin tins or liners. Bake at 325 degrees for 30-40 minutes

I'm new to DS and still exploring the full range of the forums... And i have posted here and there apart from the fsot. Whether or not i get picked, here is one of my favourite baking recipes. Vegetable Quiche Ingredients: half a bag of baby carrots, 1 bunch broccoli, 1 packet chopped creamed spinach. heat a pot of water, salt it, then add carrots. When the carrots are softened, add broccoli and cook slightly. Chop up carrots and broccoli. finely chop 2 medium onions. heat some butter, add onions and sautee. add all the*veggies,*salt and powdered black pepper to taste. in a mixing bowl, pour the cooked veggies. blend together 3 eggs and*2 cups of milk. pour this into the mixture. add enough breadcrumbs to form a*mixture with a thick, porridge-like consistency.*add* 1/2 tsp baking powder. mix well, transfer everything to a greased baking tray and bake for around 30 mins at 350, or til it's set. then sprinkle mozzarella cheese or*jalapeno/habanero flavoured cheese*on top, bake 5 mins and then broil for a couple mins til cheese is bubbly and golden. |

I don't have a good baking recipe but this is always a favorite with our play groups... I have tried so many recipes for a hummus and this is by far the best and do I dare say better than the Mediterranean one I was buying before? Note that there are two sets of ingredients, this is for when you have guests or for yourself if you like your food to look 'pretty'. Ingredients for base: 1 zuchinni, peeled and chopped cup raw tahini (make sure you like your tahini because I've bought some icky tasting ones) cup fresh lime or lemon juice 2 cloves garlic, minced 1 teaspoons celtic sea salt tablespoon ground cumin (I like using seeds-more flavorful) small handful of pine nuts (soaked) parsley Ingredients for top: little bit of cold pressed olive oil cayenne to liking (optional) About a dozen pine nuts T Italian seasoning For the pretty version: Put everything in your food processor from the ingredients list (You can add some olive oil if desired). Put your hummus into the dish you are going to be serving it in. Sprinkle your italian seasoning ontop, then press into the hummus the last of your pine nuts. Sprinkle cayenne if you like it spicy. Now top that with the olive oil, enough to put a thin layer. Leave it for your guests to mix it all together and enjoy! The other option: Put everything but a dozen pine nuts into your food processor (You can add some olive oil if desired). Put your hummus into your container and add the pine nuts and enjoy! I recommend trying it the pretty way at least once. I think it's fun to have the toppings on there and then I can mix it all myself. Let me know if you try it! |
