beans and rice and chapaati?
Anyone have a great beans and rice recipe, and anyone make chapaati with some veggies shredded inside? I lived in East Africa for a few years and can never make it like that! The beans were almost stewed wtih tomatoes, garlic, onion. So yummy, I ate it almost every day!

Were the beans green and stewed in coconut milk? I lived in Kenya as a child and had "mbaazi wa nazi" pretty regularly. Loved it. My sisters and I have been on a mission to recreate the flavor lately (without the trip to Africa) and have found several recipes that use pigeon peas. Do you think that might have been the beans? I remember the dish with or without tomato, but it almost always had the beans, garlic and onion. Mmmmm....

Re: beans and rice and chapaati?
I don't think there was coconut milk, but really-add coconut milk to anything and it's just better! I'm also not sure of the beans. I know they were able to use lots of fresh beans, you could also get dried, but where I lived we got fresh veg pretty much year round. I think any bean could work, just might not taste exactly the same. something meaty though like pinto, pigeon peas sound good.
