Anybody need a beet recipe?

I hate beets. I think they taste like dirt- literally taste like dirt. Sooo, dh plants a bunch of beets in our garden. He did it because they store well and he just built a root cellar but he is the only one who will eat them. I have tried pickled, roasted, sauteed- all kinds of savory ways- can't stand them. I decided to try a beet cupcake. Pretty good. You can still taste the beet, but only slightly. Was pretty good, bet if I added cocoa powder and made the chocolate version I wouldn't taste it at all. Both the kids loved them.

Here's the recipe http://weelicious.com/2011/06/15/red-beet-cupcakes/ I didn't have enough pureed beets to make the frosting so we just did a plain cream cheese frosting. Also the puree was more chunky then puree, but some of the other recipes I saw showed them putting in stringy beets so I guess they don't really puree well.

Now I am wanting to try the beet pancake recipe also on weelicious.

Have you roasted them? They're so good! I like the gold ones the best. They are less messy.
