Need MAJOR help for lunch ideas for a REALLY picky eater!

I have a super picky 6 yo and the best way I've been able to get him to eat things is by making them visually appealing. Silly stuff like making his salad look like a garden (celery stalks for trees, cucumbers for the trea part, cut up rashishes for the apples on the trees, sprouts for grass, etc). You could cut up lunch meat and cheese with little cookie cutters.
