Cheap and Easy Pulled Pork
I made this over the weekend and it came out wonderful!
I bought a 3.5 lb pork shoulder (about $9) BBQ rub ($2) McCorimck's? Cut up 1 onion in chunks, dump in crock pot. 2 cloves of garlic, minced, into crock pot. Add Salt and Pepper Take netting off of pork and put in crock pot. Apply BBQ rub liberally to both sides of pork and rub in. (you cant over season). Drizzle BBQ sauce on top of pork. Fill crock pot about 1/2 way with water... but dont run water over pork or you will wash off your seasoning. Cook on low for approx 7-8 hours. Once done, remove all the pork from crock put and shread. The cooking liquid is SO yummy poured over like a sauce. This size pork shoulder was enough to feed 2 adults and a toddler for dinner, plus enough for DP to take some to work, and probably another 2 adult size portions. Its great as left overs!
