Quinoa for picky eaters?
I bought a bag of quinoa a couple months ago, intending to make flour from it. but I have hit on another blend I like, so I am kind of stuck with it. I'd love to have some recipes that my picky children might eat, so as not to waste it

Burgers, soup, add it to casseroles, etc. It can go anywhere rice can go.

I didn't like quinoa the first time I tried it but now we love it! My husband really likes it a lot too. Especially with salt, pepper and a bit of butter (little ones and I eat it with just salt & pepper.) We usually have it with salmon and veggies. I've also used in it in stuffed tomatoes. Yep, "it can go anywhere rice can go." And healthier than white rice. We've done quinoa pudding too (instead of rice pudding) and thrown it in salads, wraps, or mixed it with tomato sauce. Yum. Mixed it with veggies too, like fried rice. Never even tried quinoa burgers, or quinoa flour. Maybe I'll have to try that sometime...

I make hot cereal with it. I just cook it with cinnamon and brown sugar!

Two things. Boil it in a large amt. of water as if it's pasta, it will cook evenly and not get gummy. And it's really good in stuffed peppers in place of rice. I believe I used a Taste of Home recipe that used Italian sausage.

I saw on pinterest that you can make pizza bites with it. You use cooked quinoa, add egg, cheeses, pepperoni, vegetables of your choice, etc. Bake in muffin tins topped with mozzarella and serve with pizza sauce. they looked great.
I've also done a mac and cheese with quinoa. There are lots of recipes online. You can also mix it with another grain that your kids like more. I mix it with Israeli couscous adding veggies and seasonings. |
