Drizzle with honey

I like birds nests OR toad in the hole OR whatever YOU call 'em :-)

Cut a hole out of a piece of bread, butter both sides (or be lazy like me and just put the butter in the pan to melt).
Bread in pan, crack an egg in the hole. S&P, when the bottom is solid-ish flip, more S&P and a slice of cheese. Yumm. Great way to use up one or two odd slices of bread that aren't enough to give everyone a sammy or something.

I also like Eggs in Purgatory - some marinara or other red sauce simmering in a pan (should be kinda deep). Crack egg(s) into it carefully so that each egg "holds together." Spoon some sauce over the top, lid on. It's kind of like poaching the eggs in tomato sauce. Great with some buttered toast to sop up the sauce. This is a great way to use up leftover spaghetti sauce.

It's not the most exciting but an easy super quick way to get the extra protein when you need it is eggs in a muffin tin. You can just crack an egg into each greased spot, bake covered with foil at 350 for 10-15 minutes. You can also scramble the eggs and add whatever fixing's you want for little muffin tin omelettes. I love to have them around for quick bites.

German pancakes are a higher egg quantity meal. though not as much as just eating eggs plain. We love to do omlets with cheese, mushrooms, onions, green bell peppers, tomatoes. I love to then top it off with a little Skhug ("The Isrelli salsa). It is a cilantro and bell pepper based puree. It is super delicious and has so many applications. Here is my recipe for it. I pieced it together from a couple I found, so it isn't authentic but we like it.
Skhug: The Israeli Salsa

1 green bell pepper
½ C chopped cilantro
1/8 t cumin
¼ t cloves
1/8 t salt
¼ t cinnamon
1/8-1/4 t ginger
1 T water
1T oil
Dash pepper

Clean peppers and remove seeds. Chop. Add to blender
Clean and chop cilantro. Add to blender
Add oil, water, and spices.
Put in jar, preferred glass, and let sit overnight in fridge.
Freezes well. I put freeze individual portions by putting in an ice cube tray. When frozen, transfer to a zip lock freezer bag to prevent freezer burn.
