Kale chips

Drizzle with olive oil and a little seasoned salt. Bake at 350 for 10ish or until crispy

It's good in salad too. Just replace lettuce with kale.

I LOVE kale. My kids are not super-big veggie, eaters, but I can usually get them to eat kale. Our favorite way to eat it is in a make-ahead "fried rice."

Mix cooked brown rice, diced carrots, and smaller pieces of kale with olive oil (or canola if I'm out of olive) and garlic powder. I usually make a pretty big batch of this. Cook at 400 for 15 minutes, stirring once.

This mixture can be stored in the frig or freezer for a later meal. When you're ready to cook, heat olive oil in a larger pan. I like to saute eggs in the oil and then use my spatula to "cut" them into smaller pieces. You could also use meat, shrimp, or even nothing. Mix the rice mixture into pan. Add soy sauce and heat until warmed. Yummy.

For kale chips, how important is it that they are "dry" do I just dry them off with a towel? No paper here.

I chop it roughly and steam it in a pan of water mixed with olive oil. Add some chopped garlic to give it some flavor. Cook til the kale wilts, and that's it!

I have always hated kale until this fall when we kept getting it in our csa share and found these 2 recipes. I LOVE this kale recipe, mainly because I like peanuts, but it is so delicious! Like a tangy vinagrette--I also add sliced onions.
