Re: bulk baking goods....do I need special storage?

I put mine in the freezer until ready to use (I get 2 25 pound bags, 1 will be in the pantry the other in the freezer) then move to the pantry. They are kept in the original bag. I have never had issues with bugs and probably use about the same amount of flour as you do.

I use buckets from the bakery. My dh works at a grocery store and he asked the bakery person for them. I just asked him for a few more. LOL

If you're going to get bakery buckets, just make sure they're clean-ish (as in emptied within the last day or so). Dh got us some when we were first married that were a huge pain to clean out because they'd been there for a while and had started growing things. Ewww. Now, I just buy them new and save myself the hassle. Not all that thrifty but WELL worth it.

ETA: I MUCH prefer scooping out flour for bread and things from a bucket than from a bag. Lots less spillage and mess.

Do you have a problem with bugs where you are? I have 25lbs bags that just sit in my kitchen. Before I started baking bread I had a bag that was probably 2yrs old. I've never had a problem.
