On bedrest need easy meals
My 13 yr old son is doing most of the cooking these days as I am pregnant with twins and on bed rest. We are using the crockpot often and made meatballs this week and pot roast. My 13 & 11 yr old sons are very hungry and my Dh comes home hungry looking for a hearty meal too. Any ideas for other easy meals- hopefully budget friendly-? We don't do seafood and my dh won't eat pork. No allergies

A roast with celery, potatoes and carrots in the crock pot. Same with a roaster chicken. Ham and bean soup.

Brown chicken breasts, throw in the crockpot and cover with salsa and maybe some chicken broth. Cook until done maybe 4 hrs on high? Then shred and eat like tacos with tortillas, cheese, lettuce etc or put over rice! Same thing but with BBQ sauce. Put in buns and eat with coleslaw, potato salad etc.! So easy and yummy. Ill try to think of more ideas.

A bag of boneless skinless chicken breast, a packet of taco seasoning, a jar of salsa, some frozen corn, a block of cream cheese, a can of Rotel, a can of black beans (drained and rinsed).
Cook on low for about 6 hours or until the chicken falls apart. If you don't like spicy use mild salsa and mild Rotel. You'll have a yummy filling for tacos or tortillas. Or just eat it with chips. Top it with sour cream and or cheese. |

Oh and this one is good but not a crock pot. It's my go-to easy homemade meal.
4-6 raw chicken breasts, new potatoes cut into cubes, green beans (fresh or canned-really any green veggie would work.). Arrange in 9x13 dish. Sprinkle with a packet of Italian dressing mix (and then top with a melted stick of butter). Cover with foil and bake at 350 degrees for 1 hour. Here's what it look like.
