Recipe Using Rotel
We're possibly moving soon and on going through my pantry, realized I have many cans of rotel.
Does anyone have any main dish recipes that call for a can? I put it in chili last night but I'm drawing a blank now.

EASY and SOOOO yummy!!! :
A few chicken breasts.....maybe 4? depends on how big they are. Even frozen. Throw them in your crockpot and let them cook until you can shred them. Add a brick of cream cheese, a can of Rotel (drain if you don't like it too spicy...the juice holds most of the spice) and a can of black beans (drained) and let cook for a while more. Serve in tortillas or on rice. Everyone loves this and eats a ton

Santa Fe chicken. Grilled chicken breasts sliced into strips, fettichinni or linguine, a white cheese- mozzarella, mont jack, perppe jack if you like it hot, can of rotel. If you need to cool it down add a can of plan tomatoes too. Toss the cooked hot pasta with the chicken, can of rotel and cheese. As long as the pasta and chicken are hot you don't have to heat the rotel. it will heat in the pasta and the cheese will melt.

We do a can of rotel, corn, black beans, steamed rice, and a little cheese wrapped and toasted in a burrito.

Google king ranch chicken. It uses rotel w chicken corn tortillas and other stuff. So good! I found the recipe from Kelly's korner blog

Chicken Spaghetti uses rotel and is so good.
2 Cups cooked/shredded chicken 2 Cups grated cheese 1 can cream of mushroom OR cream of chicken 1 can cream of celery 1 can stewed tomato (Using the flavored stewed tomatoes is soooo good) 1 can rotel tomato handful of raw spaghetti noodles (a little bigger around than 50 cent size) Mix everything together in a baking dish. Will be a little hard to mix raw noodles just get them in the mix the best you can so the noodles do not dry out and burn. Bake at 375 for 45 minutes covered. Uncover and bake additional 15 minutes if it still has too much liquid. |
