I tried the coins and called them sweet potato medallions. My daughter's face lit up at the word medallions. Magic.

Anyway, I cut them 1/8, coated lightly in coconut oil and cinnamon and baked them in convection on 375 for 25. My 4 year old and 18 month old could not stop eating them. The best ones had just a touch of crispy on the edges and were nice and soft otherwise.

Next run, I'll add in more cinnamon and a touch of salt. But these were mostly perfect as is. New favorite snack!

Eta. Minding my manners to say thanks so much for the ideas. I wouldn't have done this without them.

Awesome! We do sweet potato fries here (yummy with blue cheese dressing), but I will have to try some medallions.

Serving sp fries with blue cheese dressing sounds like blasphemy to me. we are firmly in the maple syrup / honey dip camp.

Of course if I tried it with blue cheese dressing I'd probably love it.

Where's the blue cheese dressing recipe, Kat? Blue cheese dressing recipes are so polarizing, with the buttermilk debate and all.

I would have thought so, too. I am not even a fan of blue cheese dressing with anything other than sweet potato fries. While visiting a relative in California, we had them with blue cheese dressing and I was amazed. One of those weird taste combos.

There's a buttermilk debate? I love some good buttermilk drama.

I just mix up equal parts buttermilk (scandal?), sour cream, almost equal mayonnaise (store bought works fine, too), couple splashes white wine vinegar, bit of sugar (no more than 1/2 tsp) then add garlic, crumbled blue cheese and pepper to taste. It's kind of my go to creamy dressing recipe with blue cheese added. The buttermilk has always behaved for me and not caused any drama.

It's okay...<looks around>...I am a Buttermilker, too. Not even in the closet, out and proud!

That looks good. I really love veggies dipped when I am in a certain type of mopey mood and I have been looking for a new recipe to try. Thanks!

I love some feta with some nice vinaigrette. Yummm... Really, if it's cheese can one go wrong?

I have been known to "fake" the buttermilk, too. My mother used to drink buttermilk. By the glass.
