3. Taste for seasoning- you can add a pinch of cumin, garlic powder, onion powder, etc. for added flavor. Divide into bowls and top as desired.

I make something similar but I just dump it all into the crock pot. Black beans, tomatoes, green chiles, chicken broth, cream (cream of soup or sour cream) corn and chicken (shredded/cubed/chunks). Cook 6 hours on low. Served with chips, sour cream and shredded cheese.

This is always my fall back meal It's SO good.

Great post!

Scalloped Ham/Potatoes
Cubed Ham
5-6 thinly sliced potatoes
1 can evaporated milk
4 -6 TBS flour

Layer potatoes and ham and flour in casserole dish. Pour in milk. Bake at 350 for 45 min. covered. Watch toward end to make sure doesn't bubble over. Uncover if this is a possibility. (Cooking times may vary depending on size of casserole)

Have a veggie for a side and if you don't count the "flour" part of the recipe you could even toss in some fruit!

This is super easy and requires very little thought. This is my go to dish because we typically have all the ingredients needed in the house.

And, One more

English Roast

place in roasting pan (or something similar) add 2 cups of water and 2 TBS beef bouillon. Bake 250 for 3-4 hours (can also be done in a crock pot)

Meal 1:
Cooked roast beef
baked potato
veggie

Meal 2: (using left over beef)
Roast Beef Hash

Dice potatoes and fry in skillet with a little oil. once potatoes are about done (15 min.) toss in shredded beef and fry another 3-5 min.
Serve with a veggie and fruit (Also good with a side of eggs)

Beef Vegetable Soup

Left over Roast Beef (you know, that tiny last bit)
frozen mixed veggies
large can of tomato juice (64 oz maybe?)
cubed potatoes
Onion (onion and potatoes are added first to tomato juice to cook through).
Heat on stove top until all veggies are done and is heated through!
