Subbing. I need more recipe ideas for freezing with the upcoming arrival of our third child. Everything I have made so far is a pasta type dish. I also plan on making a potato dish this week. Thanks for the inspiration

Here's some of my favorites:
"Meaty" Vegetarian Lasagna
Veggie Lasagna
Quinoa-Stuffed Peppers
Vegan Enchilada Casserole
Quinoa Veggie Burgers has a lot of yummy freezer recipes.

I also like to make a batch of Ground Beef Substitute from and freeze it in 2 cup portions to have at the ready.

I do BBQ crock pot ribs. Buy lean boneless country style ribs/ Dry rub with a BBQ seasoning. Grill hot for a few min. on each side and pull off to let cool. Divide into ziplock bags. Pour in a 1/2-1 bottle BBQ sauce and a half can of dr pepper. Seal up and freeze. To cook dump in crock pot and turn on low 6-8 hours. We serve it with baked beans and a vegi.

I highly recommend the book "Don't Panic, Dinner's in the Freezer". It's around $8 new and all of the recipes are pretty easy and delicious. It's been so helpful to me. Most of the meals are also economical. Check your library as well!

Loving the ideas. I plan on trying some myself.

We freeze:
bean soup
sausage and tortellini soup
lentil soup
chicken parmesan(I do this in parts-breaded cooked chicken, bag of marinara sauce, bag of cheese to top with. Then thaw, assemble in 2 minutes, and bake to melt and brown the cheese)
home made garlic bread with crushed garlic right in the bread
baked chicken dinner

I like to do both family sized dinners and individual sized dinners. This way if almost all are gone you don't need to thaw and heat a large meal, just one for the person at home.
