Making strawberry please!

I made my first batch last night and it is so yummy! But it is also very very sweet. The recipe on the pectin box calls for 7 cups of sugar...would it mess up the jam if I add less? Like 5 1/2-6 cups? Would it still set, or would it be runny?

Re: Making strawberry please!

I've only ever made strawberry freezer jam, but I love it so much I don't want to make any other kind! It uses 1 cup sugar to 4 cups of mashed strawberries (plus instant pectin). Here are my instructions for that.

Re: Making strawberry please!

You need to use low/no sugar pectin then... We are going sugar free in our house (or trying!) so I will be be making friut spread with no sugar (or anything like it - stevia, ect...). I did lots of research

ETA: It is okay to do whatever you want with freezer jam but if you can them make sure to follow guidliness We do not make freezer jam - we like canning!

Re: Making strawberry please!

I do not like sweet jam and don't like to add any pectin, so I've gone the freezer jam route with strawberry jam. It just meets our needs better. I add maybe 3 cups of sugar to an entire flat of strawberries, and then use the small freezable mason jars

As PPs have said, your best options would be low sugar pectin or going with freezer jam. I have successfully reduced sugar in my jams a few times, but about half the time, they don't set. I've switched to using low sugar pectin if I want to alter the recipe.
