We had leftover chili and tortilla chips for supper tonight. Fast and easy and Ru and E were at dancing and I am still feeling exhausted and under the weather. I was so pooped at work today that I broke down at took two DayQuil that the principal offered. Apparently I looked like I needed them? I am not sure they helped much, but I made it through the day. I hope that I feel better tomorrow. I want to go in 'cause my kids are making musical instruments. If I need to take a sick day I'll take Wednesday.

I hope you get some good sleep Janine!

We are in big time meal planning here too, Jen, as we are trying to plan what E and I will eat while R is gone next week. I want to do some cooking on the weekend to get fully prepared.

I love that I started a whole discussion on breakfast sandwiches. Yes, Jimmy Dean is his fave. Used to be able to get a 12 pack for like $10 at Costco. Now I have to buy 4packs, if they are even there, at the grocery store for $6. I used to do burritos but they didn't reheat well long term. I have not done sandwiches but I have done egg bowls, same thing they have a totally different texture reheated. Maybe it's the muffin tin thing Kari said that makes the difference, IDK. Honestly I would love for him to be able to eat egg scramble bowls and lose the starch altogether but I don't think he will do it.

Ian imitates his sister's bad speaking habits too. It's annoying.

Somehow my recliner is being sent to the old house instead of this one, and it is turning into a major PITA to get it rerouted. And I have to take some sort of online assessment for health insurance, and if it is like last year it will be long, boring, and upload very very slow. Gah. Shoot me.

Biscuit recipe.... It's my fave. Honestly, before this one, I thought I was doomed to be a terrible biscuit-maker. They never turned out right! but this recipe always turns out yummy for me and it's pretty versatile.

2 c. flour (I love whole wheat, but you can use all-purpose)
1 tbsp baking powder
1/2 tsp salt
1/2 c. of your favorite fat (1/4c. butter + 1/4 c. shortening, all butter, all shortening, lard, or a combo of butter and lard)
3/4 c. milk

Mix dry ingredients. Cut in the fat. Stir in the milk. Knead 15 times or so on a floured surface. Roll out to 1/2 in. thickness and cut out biscuits. If you have a biscuit cutter, you're fancier than me. I use a drinking glass. Bake on ungreased sheet at 400 for 10-14 mins, depending on if you like them crispier or softer.

You can also do mix-ins for more yumminess... I've tried cheese/garlic or diced ham/cheese/chive with lovely results.
