Smoothies (plain yogurt, OJ, spinach, carrots, and whatever fresh and frozen fruit we have) and oatmeal. Or's delicious with coconut oil in place of butter.

Egg sandwiches with whatever fresh veggies I feel like slicing for the side.

Salad that I make more filling by adding meat, raw sunflower seeds, cheese, and cranberries.

I find it helps me immensely to have the meat portions cooked and in the freezer. Then it takes just minutes to layer a lasagna or throw together spaghetti, casserole, tacos, etc. I usually brown 2 or 3 lbs of hamburger at once and freeze in half pound portions. I poach chicken in the crockpot and have that shredded in individual portions, same thing with pork roast so I can throw together pork nachos or BBQ pork sandwiches.

I also make it a point to spend some time on the weekend to cut up raw veggies (cucumbers, peppers, carrots, etc.) and steam some veggies (sweet potatoes, carrots, green beans).

Then on busy nights I can grab a protein, boil pasta if I want, and set out veggies and whatever fruit we have on hand.
