Coffee aficianado here. Even average coffee can be elevated in a French press. That's the first thing. We prefer the water to be about 199 degrees, and give a stir after 1 minute, then scoop the frothy bitter grounds from the top and strain after 3 additional minutes. I also hand grind or beans but I understand that verges on crazy.

The best coffee I've ever had was/is small batch from Tierra Farms. They make a Sumatran full city that has heavy syrup and low acid with a nice chocolate taste. It's the kind of coffee that you just love to roll around in your mouth. It's really hard for me to screw up unless I use too much water. They actually make it in decaf too.

Coffee is so subjective, but if you like medium roasts, full city is probably exactly what you want and Sumatran is a nice choice. I like small batches because the roast is a lot more even.
