Freezer/crockpot meals

I need help coming up with freezer/crockpot meals for a family of 4 that my family will eat.

No dairy or bell peppers (allergies)

I'm at a loss. Thank you in advance.

Crockpot chicken quesadillas

1lb of frozen skinless chicken breast
1 cup of corn
1 cup of salsa
Put in crockpot for 6-8 hrs
Pul chicken apart when done place on a tortilla add Mexican cheese and grill

I am dairy, meat and gluten free and can typically find things to eat here. We have to have crock pot meals a couple of nights a week because of TKD (it is that or salads).

This one makes a ton.

1. Chicken & Spinach
4- 6 boneless, skinless chicken breasts
1 jar Classico Three Cheese sauce
Onions
Bell peppers
Sliced zucchini & yellow squash
Bag of fresh spinach
1 lb cooked pasta
Layer chicken, onions, peppers and other veggies and top with spinach. Cook on low, 6-8 hours.


2. Beef Dip Sandwiches
4 lb beef chuck roast
1 tablespoon minced garlic
1 tablespoon dried rosemary
3 bay leaves
1 cup soy sauce
6 cups water
Place all ingredients except water in a gallon freezer bag and freeze. When ready to prepare, defrost completely. Put into crock pot and add water. Cook on low 6-10 hours, the longer the better. Dip sandwiches into jus from the remaining liquid.

3. Melt In Your Mouth Italian Sausages
2 pkgs Jennie O Turkey Store Italian Turkey Sausages, sweet or hot
48 ounces Spaghetti or Marinara sauce (Classico Tomato & Basil)
6 ounces tomato sauce
2 tablespoons tomato paste
1 medium onion, diced
2-4 garlic cloves, minced
1 1/2 teaspoons Italian seasoning
Fresh basil, sliced for garnish if desired
Grated Parmesan cheese for garnish if desired

Place the sausages in a skillet with a couple cups of water. Simmer for 10 -12 minutes. While the sausages are simmering, pour the spaghetti or marinara sauce, tomato sauce, tomato paste and Italian seasoning in the crock pot.
When the sausages are done simmering, drain them and add them to the crock pot.
Dry out the skillet and then spray it with non stick olive oil spray, over a medium heat sauté the diced onion for 4-5 minutes, add the garlic and continue to sauté until the onions are soft, add to the crock pot mixture. Cover and cook on low for 5 – 6 hours.
Leave the sausages whole for serving on a hard roll with sauce and cheese, serve over pasta or slice the sausages add back into the sauce and serve over polenta. Garnish with fresh basil and Parmesan cheese.
However you decide to serve these they are sure to please. Feel free to cut the recipe in half if you have a smaller family.
Yield: 10 servings. Servings Size: 1 sausage link and 1/10 of the sauce.


4. Casserole Spaghetti
Serves 6-8"
1 ½ lb ground beef
1 green pepper, chopped
1 large onion, chopped
½ cup celery, chopped
2 garlic cloves, crushed
1 28oz can of crushed tomatoes or sauce
2 Tablespoon chili powder
2 teaspoon salt (I add more after it’s cooked)
¼ teaspoon pepper
12 oz spaghetti or other pasta
2 cups shredded cheese (I use a Mexican mix)
Instructions
Cook ground beef. Drain and cool completely. (Or you can cook it the morning you prepare the meal and add it to the crock pot.) Add it to the ziploc bag with the green pepper, onion, celery, garlic cloves, tomatoes, chili pepper, salt, and pepper.
Write in the bag. Cover and cook on low for 7-8 hours or high for 5-6 hours on low.
When it’s almost done, cook spaghetti according to package and drain. Add cooked spaghetti and about 1 cup of cheese to the crock pot and mix well.
Add more cheese to the top and serve!

5. Crock Pot Chicken Ranch Tacos
1 -1/2 pounds boneless, skinless chicken breasts
1 Packet taco seasoning
1 Packet Ranch Dressing powder
1/4 cup Ranch dressing (do not add to freezer bag)
Write on the bag:
Dump in the slow cooker and cook on high for 4-5 hours or low for 6-7 hours. When the meat is cooked, shred and add back to the crock pot with 1/4 cup ranch dressing until heated.
Instructions:
Dump all the ingredients except for the Ranch dressing into the freezer bag. On the day you serve the meal you will need the additional items:
taco shells (soft or hard)
lettuce
cheese
tomatoes
salsa
sour cream

6. Crock Pot Beans and Rice
3 cups cooked beans, total
1 cup brown rice
1 can of diced tomatoes or 1 ½ cups fresh diced tomatoes
1 tablespoon butter, melted
Salt to taste
1 teaspoon cumin
½ teaspoon garlic powder
2 cups water
Diced green chilies, if desired
Hot sauce or cayenne pepper, if desired
Combine rice and butter in the crock pot. Rinse and drain beans. Put remaining ingredients and beans into crock. Stir well. Cover and cook on high for 2-3 hours. Begin checking at 2 to 2 ½ hours to see if your rice is done.

7. Slow Cooked Chipotle Beef Tacos
3 lbs ground beef
1 onion, finely chopped
8 ounces tomato sauce
2 chipotle peppers (this is 2 peppers not 2 cans)
1 teaspoon cumin
¾ teaspoon salt
Cook ground beef and onion in a skillet until the meat is no longer pink and the onion is tender. Set aside.
In a food processor or blender puree tomato sauce, peppers, cumin, and salt.
Combine pureed sauce and ground beef and place in a slow cooker. Cook on low for 3-4 hours.
Serve with beans, lettuce, cheese, etc as tacos with tortilla shells or use with tostada shells.
The leftover filling freezes really well.

8. Crock Pot Taco Meat
1 pound ground hamburger, browned
4 cups frozen corn
1 cup chopped onion
2 can (14.5 ounces) diced tomatoes with green chilies
2 can (8 ounces) tomato sauce
2 teaspoon cumin
2 teaspoon chili powder
2 cup black beans, cooked
Taco salad fixings: lettuce, chips, shredded cheese, sour cream
Combine the meat, corn, onion, tomatoes, tomato sauce, and seasonings in your greased crock pot. Stir well. Cover and cook on low for 3 hours. Add black beans and stir. Turn off crock pot and let mixture sit to warm beans.
Serve meat on top of a taco salad.
*When re-warming, I added a bit of water so it wouldn’t be so thick.*


That's all in my freezer right now, except the sausages. They were super yummy! I haven't tried the others yet.
